RECIPE: Dad's Pancakes by Lydia van Biljon

Today felt like a pancake and maple syrup sort of a day! I adapted my dad’s recipe for our allergen-free home. My toddler enjoyed helping me to make them, as well as a great big mess. She quickly polished off three warm pancakes drizzled in maple syrup. Perfect start to a chilly winter morning and healthy too! We ran out of frozen blueberries so threw in some raspberries which added a pretty splash of pink and a nice fruity flavour. My dad used to make pancakes every Saturday morning for us kids growing up, so my house officially smells like weekend. Happy weekend everyone!
Dad’s Pancake Recipe
Dairy free / Gluten free / Vegan
Ingredients:
3 tablespoons applesauce*
¾ cup coconut milk or rice milk
2 tablespoons vegetable oil
1 teaspoon vanilla
¾ cup gluten-free flour
¼ cup cornflour
1 ½ tablespoons sugar
1 tablespoon baking powder
2 tablespoons flax powder
¼ teaspoon salt
Optional: fresh or frozen berries or chocolate chips.
Method:
Combine the applesauce, dairy-free milk, oil and vanilla and set aside. In a separate bowl, combine the gluten-free flour, cornflour, sugar, baking powder, flax powder and salt. Slowly stir in the wet ingredients. Stir together gently. Do not over-mix. Optional: Add fresh or frozen berries or chocolate chips to the batter.
Heat a frying pan over medium heat and spray with some oil.
Pour the pancake batter by large spoonful into the hot pan.
When bubbles begin to pop on the top, flip the pancakes over and continue cooking 2-3 minutes or until golden brown. Serve with honey, jam, syrup or fresh fruit.
*applesauce - Peel one medium granny smith apple and chop into small pieces. Cover and simmer in 1 cm of water on a low heat until soft and the water has evaporated. Mash until smooth.
