GUEST WRITER: Lydia von Biljon's Allergen-Free Dinner Ideas

Coming up with creative meal ideas is no easy task. It’s one thing deciding on what to eat for ourselves, and another to think of something fun and healthy enough to appease our toddlers.

Self-proclaimed ‘allergy mom’ has some dinner ideas for all of us to get us through the week!

TODDLER-FRIENDLY & ALLERGY-FREE DINNER IDEAS

No gluten, dairy, eggs or nuts? What do you eat? The simple answer is: We eat healthy!

Without the option of pizza, ice cream, cakes, cookies, or a take-out meal, my eldest daughter – P – has grown up only knowing home-cooked, healthy foods.

As a result, she’s a good eater, in perfect health and loves a wide range of foods.

At a check-up with the paediatrician when P was 1 year old, the doctor seemed amazed at her good health and commented that perhaps every child should start out life on this diet!

Is it expensive? It could be if we frequented the health shops and specialty food aisles, but we avoid those and it’s actually very affordable!

Here are four simple, tasty, allergen-free and toddler-approved meal ideas from the past week:

  1. Creamy chicken pasta with steamed cauliflower (The pasta is gluten-free and I cooked the chicken cubes in some herbs, seasoning and coconut cream)

  2. Spanish chickpea rice with sliced cucumber drizzled in a lemon mayonnaise dressing (vegan friendly)

  3. Pasta (gluten-free) and steamed gem squash stuffed with a tomato mince filling

  4. Creamy chicken strips with mild Sri Lankan beetroot curry and steamed rice (The chicken is coated and fried in vegan mayonnaise and coriander and the beetroots are cooked in a coconut milk curry sauce)

My Top Tip: I use a sectioned plate for my toddler’s food as it ensures that I prepare her a vegetable, a protein and a carbohydrate with each meal.

I also always cook extra so that she has lunch for the next day!
