RECIPE: Elana Afrika-Bredenkamp’s Meat-Free Stir-Fry

Stir-fries are easy. You can use anything! I have mastered a special flavour that I want to share with you. It’s delicious. If you don’t like hot food, leave out the chilli flakes.

Ingredients:

  • Cooked pasta

  • Steamed or cooked Brussels sprouts

  • Corn from a tin

  • Chopped peppers

  • Chopped onions

  • Ginger (I keep a jar of ginger in the fridge - great for taste)

  • Chilli flakes

  • Coriander flakes

  • Garlic

  • Soy Sauce

  • Sesame Oil (Only 6 drops)

Method:

  1. Fry up onions in a nice big pan or wok with a little bit of cooking oil.

  2. Add peppers and give it an occasional stir.

  3. Add the rest of the ingredients except the garlic, soy sauce and sesame oil.

  4. Once everything is more or less cooked (My stir-fries are nice and crunchy), add garlic, soy sauce and sesame oil.

  5. Keep on heat for about 2 min, and remove.

  6. Serve hot from the pan.
